Baking without a Mixer

Happy September! Recently I found Sally's Baking Addiction and I have loved the recipes I have tried so far. All of recipes I will discuss in this post are free from peanuts, tree nuts, fish, shellfish, legumes and seeds.


I have been wanting to get back into baking more, and Sally's Baking Addiction is perfect for trying new recipes. The recipes on her website are clear, detailed and easy to follow, and there are photos and even videos to go along with the recipes.


So far I have made three recipes, a quick bread, cookies and blondies, and none of them involved using a mixer. I love being able to mix ingredients by hand, as it feels like the baking process goes so much faster.

Each month there is a baking challenge, and during this month of September 2020, the challenge is for Cinnamon Swirl Quick Bread. This was the first recipe I made from Sally's Baking Addiction, and I was really excited as there was only one egg. The bread was fun to make, and I was very happy with how it came out.


Next, I made her Chewy Chocolate Chip Cookies, and my family really loved these cookies. The cookies all had a consistent thickness, and involved both chocolate chips and chocolate chunks.

This cookie recipe involved chilling the dough for two hours, and then individually scooping the cookie dough, so it took much more time than the quick bread. After making the dough, I actually split part of it into it's own bowl before mixing in the chocolate chips to main bowl. This way I made some cookies without chocolate chips, as I am currently trying to avoid most kinds of chocolate. I also liked how there was only an egg, plus an egg yolk in this recipe.

Finally, I made her Cake Batter Blondies, and it was so easy to make. I mixed together the Betty Crocker Party Rainbow Chip cake mix, one egg and a few other ingredients, poured it into a pan, and baked it. It was so quick to put together, and exciting to have blondies that taste like cake.


These recipes were all really fun and easy to make. I would definitely make them again, and I am also looking forward to trying her other recipes.
